Angel Food Cake
Ingredients
- 1 cup cake flour
- 1½ cups sugar
- 12 egg whites
- 1½ teaspoons vanilla extract
- 1½ teaspoons cream of tartar
- ½ teaspoon salt
Step by Step Instructions
Step 1
Preheat oven to 375 degrees F. Be sure your 10-inch tube pan is clean and dry. Any amount of oil or residue could deflate egg whites.
Step 2
Sift together flour, and ¾ cup sugar and set aside.
Step 3
In large bowl, whip egg whites along with vanilla extract, cream of tartar and salt, to medium stiff peaks. Gradually add remaining sugar while continuing to whip to stiff peaks.
Step 4
When egg white mixture has reached its maximum volume, fold in sifted ingredients gradually, one third at a time. Do not overmix.
Step 5
Put batter into tube pan and bake for 40 to 45 minutes until cake springs back when touched.
Step 6
Invert the cake, and allow it to cool in the pan. When cool run knife around edge of pan and invert onto plate.
