Texas Quesadilla
Ingredients
- 2 tablespoons oil, divided
- ½ onion, sliced
- ½ green bell peppers, slice
- ½ red bell peppers, sliced
- Salt to taste
- 4 flour tortillas
- ½ pound cooked steak, diced
- ½ cup barbecue sauce
- 1 cup shredded Mexican cheese blend
Step by Step Instructions
Step 1
Heat 2 tablespoons oil in a skillet over medium heat; add onion and bell peppers in the hot oil and cook until onions are softened, about 5 to 10 minutes with salt and transfer to a bowl.
Step 2
Brush 1 side of each tortilla with remaining oil. Place tortilla, oil-side down, in the same skillet; sprinkle with ½ the beef, ½ the onion mixture, ½ barbecue sauce and ½ the cheese mixture. Place a second tortilla, oil-side up, onto cheese layer, pressing down with a spatula to seal.
Step 3
Cook the quesadilla over medium heat until cheese melts and tortillas are browned, 3 to four minutes per side. Remove quesadilla from skillet and cut into wedges. Repeat with remaining ingredients for second quesadilla.
Step 4
Serve with salsa, guacamole, and sour cream.
