Pecan Sandies
Ingredients
- 1 cup margarine, softened
- 1 cup vegetable oil
- 1 cup white sugar
- 1 cup confectioners’ sugar, sifted
- 2 eggs
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 2 cups chopped pecans
- ½ cup white sugar for decoration
Step by Step Instructions
Step 1
Preheat oven to 375 degrees F and cream margarine, vegetable oil, 1 cup white sugar and confectioners’ sugar in a large bowl until smooth.
Step 2
Beat in eggs one at a time, then stir in vanilla.
Step 3
Combine flour, baking soda, cream of tartar and salt separately and then stir it into the creamed mixture. Mix in chopped pecans.
Step 4
Roll dough into 1-inch balls and then roll each ball in remaining white sugar.
Step 5
Place cookies 2 inches apart on ungreased cookie sheets.
Step 6
Bake for 10 to 12 minutes or until edges are golden and then remove from cookie sheets to cool on wire racks.
