Tapioca Pudding
Ingredients
- 4 cups whole milk
- 2/3 cups white sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- ½ cup small tapioca pearls
- 3 egg yolks
Step by Step Instructions
Step 1
Whisk milk, sugar, vanilla extract, salt and tapioca pearls in slow cooker until sugar has dissolved. Turn cooker to high setting, cover with lid and cook for 2 hours (If preferred, set on low setting and cook for 4 hours).
Step 2
Stir pudding occasionally during cooking. Place egg yolks into bowl, whisk until smooth.
Step 3
Mix about 1 tablespoon of hot pudding into egg yolks until thoroughly combined.
Step 4
Continue gradually mixing hot tapioca pudding into egg yolks.
Step 5
Slowly increase amount of pudding mixed int until yolks and pudding total about 2 cups. Slowly pour yolk mixture into pudding in slow cooker until blended.
Step 6
Whisk constantly until egg yolks have thickened pudding about 5 minutes.
Step 7
Place lid on cooker.
Step 8
Chill in refrigerator.
