Simple Raisin Pie

Ingredients

  • 2 (9 inch) pie shells
  • 2 cups water
  • ½ cup white sugar
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 2 cups raisins

Step by Step Instructions

Step 1

Preheat oven to 450 degrees F (225 degrees C).

Step 2

In large saucepan, combine water, sugar, flour, salt, vanilla, butter or margarine, and lemon juice.

Step 3

Mix well, then stir in raisins.

Step 4

Simmer over low heat for 10 minutes, stirring frequently.

Step 5

Remove from heat.

Step 6

Pour raisin mixture into pastry-lined pie pan.

Step 7

Cover with second pastry.

Step 8

Seal edges and cut steam vents in top.

Step 9

Bake for 15 minutes, then lower heat to 350 degrees F (175 degrees C).

Step 10

Bake an additional 25 to 30 minutes.
